The Mediterranean with Nathan Outlaw

Another exciting part of our Culinary Residency program is a collaboration with dual Michelin-starred chef, Nathan Outlaw. Outlaw will host a residency of his famous ‘Fish Kitchen’ on selected Queen Victoria sailings in 2025, showcasing the seafood of the Mediterranean.

Nathan Outlaw is an English progressional chef, celebrating seafood of the highest quality, served simply in homage to Cornish waters. Having worked previously with chef Rick Stein, and having global residencies at Burj al Arab in Dubai, and London’s Goring and Capital hotels, he now runs his restaurant in Port Isaac, Cornwall. He will bring his award-winning cuisine to guests on Queen Victoria in The Verandah Restaurant on four Mediterranean voyages, where you can be treated to a menu of the finest, freshly caught fish of the Mediterranean*, at a special residency of his famous Fish Kitchen.

Outlaw’s ethos is all about letting the ingredients sing. He uses high quality, freshly caught fish, served simply. During his five-day residency on board, the seafood featured in the menu will come from Barcelona’s fish markets. Here, Outlaw will choose from the day’s catch, which will go on to dictate the menus that you’ll see on board. Lobster. Tuna. Scallops. Anchovies. The fruit de mer in this part of the world are varied and flavorsome, and with Outlaw’s skill, each plate is sure to bring a depth of flavor and artistry you’ll not soon forget.

Plus, in addition to sampling some extraordinary cuisine, you’ll also have the to learn about his life and cooking ethos at a Cunard Insights talk and glean tips from the expert at his live cooking demonstration.
